Matured in a traditional cheese cloth in a cave like environment for approximately 12 months to develop a rich, bold flavour with earthy characteristics. Winner of Gold Medals at the Royal Hobart Fine Food Awards 2019, Royal Queensland Fine Food & Wine Show 2019, and DIAA Dairy Product Competition 2018 (highest scoring Cheddar Consumer Unit).
