Leyden cheese is cumin spiced cheese that originates from the Leiden area in the Netherlands. Nowadays it is made both in farm and in factories. It is the most common form of cumin seed. The difference between Gouda cheese and Leyden cheese is that the latter has a lower fat percentage: 40+. Old Leyden cheese has matured naturally over a period of 2 years. It is full and spicy in flavour. A real treat.
